Probably because Stephen King has been using the name "Castle Rock" since 1979, nearly a full decade before the production company was founded. Prior to that, the name first appeared in 1954 as a fictional fort mentioned in Lord of the Flies.

Also, from the Wikipedia article you posted: "Reiner named the company in honor of the Maine town that serves as the setting of several stories by Stephen King (which was named after the fictitious Castle Rock in Lord of the Flies), after the success of his film Stand by Me, which was based on The Body, a novella by King."

So, that's probably why. It would be in rather poor taste to sue the author from whom you borrowed the name for later using the name you borrowed for their own project.
